The Zeeland marsh samphire season runs from May to September and if you order marsh samphire from us out of season, it will come from Mexico or Israel. Marsh samphire has a terrific salty flavour with a nice bite; you can blanch it for a few minutes or stir fry it for a few minutes. It is great with salmon or cod and even better with mussels!
