Oysters: an aphrodisiac?
It has been supposed for centuries that oysters are good for the libido. The 18th century Casanova, who claimed he had seduced 122 women, ate 50 raw oysters for breakfast. Casanova seems to have had the right idea. American and Italian scientists have discovered that oysters and other bivalve molluscs such as mussels and clams contain two rare amino acids which stimulate the production of sex hormones.

The research team was led by George Fisher, professor of chemistry at Barry University, Miami. The research results were presented in March 2005 at the annual meeting of the American Chemical Society in San Diego. The results of scientific research have never been so eagerly awaited….

Finally another tip: according to Fisher, the effect is greatest in spring. Furthermore, oysters are best eaten raw.

How to eat them?
Oysters, particularly the flat Zeeland oyster, are delicious raw with a little lemon juice, some red wine vinegar and a finely chopped shallot with a drop of Tabasco - or just as they are.

Oysters au gratin

Ingredients
• 24 oysters (creuses)
• 2 shallots
• 75 g soft butter
• freshly chopped parsley
• breadcrumbs
• pepper

Open the oysters. Collect the oyster liquid (two dessertspoons). Remove the meat from the shell. Mix the butter, finely chopped shallots, parsley, pepper and two dessertspoons of the oyster liquid. Return the oysters to the lower shell. Top with a dessertspoon of the buttery sauce and scatter with breadcrumbs. Flash under the grill for a few minutes.
