The natural habitat of sea lavender comprises the elevated salt marshes in Zeeland which are flooded by the Oosterschelde during high tides. This vegetable has a mild salty flavour. Sea lavender is really tasty when braised quickly in a pan with a knob of butter and it can be eaten with all kinds of fish and meat.
