Grading
After the mussels have been inspected, they are graded by size
in sorting machines. In the Zeeland mussel sector, we work with
a standard grading system in which the mussels are graded according
to the number of mussels that goes in a kilo. These grades are
as follows:

Oysters are graded too, distinguishing between flat Zeeland
oysters and creuses. The size of the flat Zeeland oysters is
indicated with zeros. One zero (1/0) therefore stands for the
smallest oyster and six zeroes (6/0) for the biggest. The size
of the creuses is indicated in Roman figures from I to IV. For
creuses, the lower the figure, the bigger the oyster.
