Summer oysters

These oysters are cultivated specifically for the summer. They are neutered and cannot spawn. Other oysters spawn in the summer, becoming ‘laiteuse’ or milky and, although you can eat them, not everyone finds them very palatable. We pack these summer oysters daily - fresh from our cooled oyster basin in Yerseke.
