Whelks are big snails which live on a soft sandy seabed. Their shells are white on the inside and greenish-brown on the outside and they can grow to a size of 10 cm. The best way to cook them is to boil them briefly in strong court bouillon. Don't leave them too long or the whelks will become tough. Our whelks come from France.
