The flavour of Oosterschelde lobsters is subtler and milder than that of other lobsters. Scientific research has shown that this is due to a DNA structure which is different from that of the rest. Another point which may be even more significant: we fish these lobsters out of the sea in our ‘back garden’. They couldn’t be fresher!
